Buttercrumb and Dill Baked Cod

Ingredients
- 1 C mayonnaise
- 1 T olive oil
- 1 ea shallot, minced
- 1 t lemon zest
- 1 t dill, chopped
- 4 ea cod fillets, skinned and boned
- 1 C bread crumbs
- 2 T butter, melted
- 1 t olive oil
- 2 T parsley, chopped
Instructions
- Whisk together the mayonnaise, 1 T olive oil, shallot, lemon zest, and dill to form a spread. Separately, combine the bread crumbs, melted butter, and 1 t olive oil.
- Season the cod, place on a baking rack, coat each fillet with the dill mayonnaise, then sprinkle with the breadcrumb mixture.
- Bake at 375 until the fish flakes easily with a fork.
- Plate, garnish with chopped parsley, and serve.
