Buttercrumb and Dill Baked Cod

  1. Whisk together the mayonnaise, 1 T olive oil, shallot, lemon zest, and dill to form a spread. Separately, combine the bread crumbs, melted butter, and 1 t olive oil.
  2. Season the cod, place on a baking rack, coat each fillet with the dill mayonnaise, then sprinkle with the breadcrumb mixture.
  3. Bake at 375 until the fish flakes easily with a fork.
  4. Plate, garnish with chopped parsley, and serve.
